Hāngi Master believes that to cook Hāngi for people is at the heart of the welcome and hospitality of Māori culture, acts of service known as Manākitanga.

Hāngi Tuturu is a 7-hour cooking process which we cook from my home in the wild west – Te Henga. We use a time-honoured ancestral practise to heat rocks with manuka timber then bury the food in the earth to cook a delicious meal, which takes on the flavours of the earth and the smokiness of the timber. Soul food at its best!
